Following
a seasonally cool and cloudy September, the
grapes were harvested by hand, destemmed and began alcoholic fermentation. The cap was submerged rather
than using the more commercially expedient methods of pumping-over or
punching-down. Following completion of the primary fermentation, the
free-run juice was racked off into a combination of one- and two-year
old French oak barrels where it rested until late August. To ensure
maximum flavor and ageability, this wine was bottled unfined and
unfiltered.
Rich,
ripe and warm, this has pronounced red berry and rhubarb fruit with
hints of chocolate. Very accessible and easy to drink. |
