The grapes
for the Quail Hill Pinot Noir came from the east-facing hillside
vineyard immediately adjacent to our caves. The 1995 fruit was
handpicked and hand-sorted prior to destemming and crushing. The must
was gently moved to small, open-top fermentors where the cap of solids
was punched down twice per day to encourage development of color and
flavor. Transferred to new Louis Latour French oak barrels, the wine
completed malolactic fermentation and was then allowed to age for eleven
months in the dark, cool caves at Rutz Cellars. In order to have as
broad a flavor base as possible, this wine was bottled unfined and
unfiltered and over time some sediment will develop.
Dark ruby in color, the 1995 Quail Hill Pinot Noir
fills your mouth with flavors of strawberry and rhubarb, with overtones
of tea and spice. A demonstrative, showy wine, it has the flavor and
balance to enjoy immediately or to justify cellaring. |
